They're cheap. They're nutritious. They're very nice...but what do you do with them?
I have found two answers.
1) Herb lentils with rice. This is amazing! I didn't have Swiss cheese, so I used a little shredded Colby Jack. Incredible. Total cost? Really, just the lentils are something that isn't already on my purchase list from the store. I already had the rice, the onions, the spices, the cheese, and the broth. I think I've said it before, but building inexpensive dishes starts with the expense of buying a variety of spices. They last a long time, go a long way, and this dish delivers.
2) Chirozo and lentils. The chorizo sausage comes from Aldi and I think it costs me $2. Again, celery is something already in your fridge, I bet. I have substituted onions instead of the celery, and I think I put carrots in there once. This is a tried and true recipe for me, but I wanted something else to do with those cheap, filling lentils.

mm, both recipes sound lovely. I'd recommend mixing lentils with sundried tomato paste and some feta cheese. Yum!
